I enjoy corn bread and muffins so I was excited to try a recipe with 'real' corn in it. As expected this was a dense muffin, there was a lot of corn goodness going on here. I made them to eat with chili when my kids were here. Everyone ate one--but the reviews were mixed. I thought they were quite tasty however some just couldn't get used to 'chewy' muffins! I would like to try them in the fall with fresh corn.
I am anxious to see what other TWD bakers thought of the Corniest Corn Muffins.

ReplyDeleteI made these on Sunday to go with chili. I made them i my mini pan (I ended up getting 45 minis) I used Trader Joe's frozen white sweet corn and it was good- not chewy at all.

ReplyDeleteWe loved them and will definitely be making them again and again. But I like cornbread almost any way you fix it. Yours look amazing.

ReplyDeleteWe had some with and some without because there seemed to be a distinct view about kernels inside muffins. I thought they were great both ways. Yours look wonderful and I love that little leaf plate you have them perched upon. Nice.
