TWD Corniest Corn Muffins

Jill is our hostess this week. She will have the complete recipe for the Corniest Corn Muffins on her blog. Check out her blog header, it's awesome.
I enjoy corn bread and muffins so I was excited to try a recipe with 'real' corn in it. As expected this was a dense muffin, there was a lot of corn goodness going on here. I made them to eat with chili when my kids were here. Everyone ate one--but the reviews were mixed. I thought they were quite tasty however some just couldn't get used to 'chewy' muffins! I would like to try them in the fall with fresh corn.
I am anxious to see what other TWD bakers thought of the Corniest Corn Muffins.

  2. I made these on Sunday to go with chili. I made them i my mini pan (I ended up getting 45 minis) I used Trader Joe's frozen white sweet corn and it was good- not chewy at all.

  3. Lovely plate! The corn still looks plump in your photos. Very nice, but I agree with you, not a repeat.

  9. Yours look delicious and I love your plate. The header on my blog was taken on the beach in Maui on my 20th wedding anniversary so it always brings back a special memory! So glad you like it. Thanks for baking along with me this week.

  15. We had some with and some without because there seemed to be a distinct view about kernels inside muffins. I thought they were great both ways. Yours look wonderful and I love that little leaf plate you have them perched upon. Nice.
