I do love a rich decadent brownie, full of good chocolate, frosted or maybe a drizzle of ganache. But sometimes simple and quick is needed. Like when the grand kids come and need a treat or when you have a chocolate craving and you don't want to go to the store.
This recipe is perfect. It uses ingredients you probably have in your pantry. It is quick, you can have it mixed while your oven is preheating. In just 30 minutes you have a dessert that can be eaten warm. Oh and most important it tastes good. It would have been yummy with a scoop of ice cream but someone beat me to it. It was perfect with a glass of milk.
Sometimes simple is the best!
Simple Brownies
1/2 cup oil
1/4 cup baking cocoa
1 cup sugar
2 eggs
2 teaspoons vanilla
3/4 cup flour
1/8 teaspoon salt
1/2 cup chopped walnuts
1/2 cup milk chocolate chips
In a small bowl combine oil and cocoa. In a large bowl beat sugar and eggs. Stir in vanilla and cocoa mixture. Gently stir in flour and salt just until moistened. Stir in walnuts.
Pour mixture into a greased 8 inch square baking pan. Sprinkle with chocolate chips. Bake at 325 degrees for about 30 minutes or until a toothpick inserted near the center comes out clean. Cool, serve with ice cream or milk.
