Semolina Bread TWD/BWJ


Stepping outside my comfort zone often happens as a result of being in a baking group. Take Semolina flour for instance. I've been baking for over 35 years and never used it. Does one admit such things on a public blog?? But I'm happy I accepted the challenge because this bread was delicious. I will make it often.


This is not a quick recipe but it is not a difficult recipe either. It comes together easily in your food processor or mixer. It does have 3 rising times, each for about 2 hours. But patience pays off with a beautiful loaf of sunny, slightly nutty bread. It was perfect with a bowl of Cream of Broccoli Soup.

Now that I think about it I did decrease the salt a bit. The recipe called for 2 teaspoons of salt, I cut it down to 1 1/2 teaspoon. I think it would have been fine either way. I also made White Loaves while I had things out. 3 beautiful loaves of bread in one day--what a treat!

  8. I am very impressed with your bread. Mine was not so pretty! It did have a wonderful taste though. I bet it was wonderful with your soup!

  11. You did a beautiful job on this loaf. I'm not the biggest semolina fan in the world (and I have made several loaves with it) so I thought I would not make this one, but after seeing yours, I might change my mind as yours is gorgeous, just really beautiful bread. Kudos to you!

  15. I love the name of your Blog, Cindy. And, your bread, beautiful. Three loaves, you're overdoing it, my dear. Although it's 110 degrees where I am presently, I love broccoli soup. Ever since I joined French Fridays and Tuesday, both with Ms. Greenspan, I've been doing a lot of things I've never cooked, baked, or made before. And, I will admit to more than 35 years in the kitchen. Well done.

  16. Nice job! I'm enjoying seeing the various shapes and slashes folks chose for this bread. We skipped this recipe (saving it for the next catch up Tuesday), but I'm sort of wishing we hadn't now that I've seen everyone's lovely loaves.

  23. Your bread looks perfect. Hubby has been making a lot of bread and pasta lately and he uses semolina in pasta. I'll have to recommend he use to make me some homemade bread! ;)
