I enjoy sweet potatoes, I just don't think of them as a cupcake flavor. Thanks to the Martha Stewart Cupcake Club I had a chance to combine the two.
The cupcakes came together quickly, cream sugars and butter add eggs, stir in baked mashed sweet potatoes. Add dry ingredients that include plenty of cinnamon and a bit of nutmeg. The house smelled wonderful as the cupcakes baked.
They were delicious warm from the oven. The suggested 'frosting' is simply mini marshmellows and candied pecans which I'm sure is yummy...but I wanted to mix things up. Actually I didn't have any marshmellows, it was snowing sideways and I didn't want to go out. I love browned butter frosting and it proved to be a great alternative. I must give this recipe five stars it was excellent!

Hubby & I ate these before adding the topping and ya know, you're right...they need very little. I bet the brown butter was a nice touch for these!! ((better had been, as I wouldn't have left the house while side-ways snowing going on outside!))

I also love browned butter icing. I should have tried that instead. And then maybe I wouldn't have thought these were muffins or a side dish.
We have a new goal for the upcoming week...eating 7-10 servings of fruits or veggies a day!

Now that's a great solution - LOVE the drizzled look, very informal, and goes great with the rustic flavor of these! I've been using browned butter a lot lately for cookies - love the flavor. I'll have to give the icing a try - nicely done!

Yes - sideways snow does tend to be a bit of a problem when you need to make a market run!

Guys here didn't think sweet potatoes and cupcakes should be combined, so I skipped this rather than eat a dozen cupcakes myself...LOL. They like sweet potatoes savory, but not with anything sweet ON them. Seemed to defeat the purpose, at least that was my rationalization at the time. Seeing yours, with your icing, however, and not telling them they were made with sweet potatoes, may send me back to the kitchen to give them a try, and well, I can always take them up and leave them for the swim team, right? Yours look fun with all that drippy icing.
