I do wish Quiche was a bit more photogenic! But, you will have to trust me--this is delicious. I like quiche, actually I really like quiche. I just don't like it for several days in a row. Enter, 'Quiche for Two'. Some brilliant chef decided that you really could cut a quiche recipe way down and put it in a small casserole--rocket science I know.
Really this is a great recipe, it is crust less which is fine by me. I'd rather forgo a high calorie crust and eat a brownie! There are so many ways to change this recipe--use what you have in your fridge. It will always be yummy. This recipe came from a Pampered Chef Cookbook. I don't know which one, as I have a tendency to rip recipes out of cookbooks, do you do that??
Quiche for Two
Base:
3 eggs
1/2 cup half and half
1/4 tsp salt
2 Tbsp all purpose flour
Ground black pepper
Filling Options
3 slices crisply cooked bacon, 1/3 cup seeded, chopped tomato, 2 Tbsp thinly sliced green onion, 1/2 cup shredded Swiss cheese
OR
1/2 cup chopped ham, 1/3 cup chopped fresh broccoli, 2 Tbsp finely chopped onion, 1/2 cup shredded sharp cheddar cheese
Protein, vegetable, cheese
Preheat oven to 375 degrees. Spray small oval baker with nonstick cooking spray. Whisk together base ingredients, set aside.
Combine fillings and cheese, spoon into the bottom of the baker. Pour base over filling ingredients.
Bake 30-35 minutes or until the center is set. (A knife inserted will come out clean.) Let stand 5 minutes before serving.

Sunshine Breakfast Casserole

Several years ago we were invited to a Ward Party and asked to bring this casserole. The recipe was given to me by a dear friend and great cook Marlene Black. It has become a family favorite ever since. Now, it probably won't win any beauty pageants but once you taste it you won't care. This is what breakfast should taste like. Serve with some fresh salsa, or Pace brand. Add a fruit salad and some juice and you will be able to feed a crowd and enjoy the meal with them.
We had a crowd here for breakfast this morning--this was perfect.
Sunshine Breakfast Casserole
6 cups frozen hash browns--thaw (you will have about 4 cups)
1 1/2 cups cottage cheese
3 cups grated cheese (I used 1 cup Extra Sharp Cheddar and 2 cups Jack Cheese--but use what you love)
6 eggs beaten
1 pound diced bacon
1 large onion, diced
Cook diced bacon until crispy, drain off most of the grease then add onions, cook till soft. Let cool slightly
Mix all ingredients together, pour in a 9x13 pan that has been sprayed with Pam. Smooth mixture.
Bake at 350 degrees for about 35 to 40 minutes until set and bubbly. Cool for 15 minutes before serving. Serve with fresh pico or diced tomatoes and green onions.

Crustless Ham and Artichoke Quiche
I don't often re post a recipe but this quiche is just too good to be hidden. We made it for dinner tonight and it was delicious. It stood on it's own, it didn't need salsa, ketchup or any thing.
I like this recipe because it doesn't have a crust. You save time and calories. Tonight we made it with fat free plain yogurt and low fat cottage cheese. We used mini Bella mushrooms and a jar of marinated artichoke hearts. This is a great recipe to 'clean out' the cheese drawer. We used Parmesan, Gruyere and medium cheddar. It was a great combo. I thought about adding some blanched asparagus. So you really can't go wrong
with this quiche, there are so many ways to make it yours. Try it soon!

Denver Omelet
I have no idea why this is called a Denver Omelet, I don't know where the recipe came from. I do know that it has evolved into a simple weekend breakfast or a 'breakfast for dinner' as we like to call it. It is easy to double and feed a crowd, we often have brunch crowds. I like Denver omelet because there are so many variables. The recipe calls for ham but crisp bacon or even cooked sausage works. Any kind of pepper works, red and green are pretty for Christmas. Use whatever kind of cheese you have, it's a good clean the deli drawer dish. Do top the warm pie with fresh diced tomato. So try Denver Omelet and see why it is a favorite at our house.
DENVER OMELET PIE
6 eggs
½ teaspoon onion powder
½ teaspoon salt
1/8 teaspoon pepper
1 cup shredded cheese, cheddar, jack, Swiss or a combination
½ cup diced ham or crisp cooked bacon
½ cup green, yellow or red pepper, diced
4 cups frozen shredded hash browns, I put them in the microwave for a minute or two. They don’t need to be completely thawed.
1 tomato, sliced
Serve with Cholula Hot Sauce or Franks
In batter bowl, beat the eggs, seasonings, ham, potatoes, peppers and cheese. Pour in a greased 9 inch pie plate. Bake at 350 degrees for 40-45 minutes or until knife inserted in middle comes out clean.
Garnish with tomato slices or salsa. Fresh salsa is the best but Pace works.
This can also be baked in a 9x9 pan. It is easier to serve a crowd.
Double the recipe and it fits in a 9x13

Quiche Supreme
Do real men eat quiche? I think that was a book from the 70's, we have often joked about quiche. I happen to love quiche and have tried to get the men in our family to love it to. Do they? Well, they do love quiche, especially if it has plenty of meat in like this recipe. It must be served with a side of salsa and a dash of Cholula's. And last but probably most important, it can't be served too often. I on the other hand could eat quiche for lunch several times a week.
Quiche Supreme
9-inch pie crust--straight from the freezer section at Walmart or you could make your own
1 cup shredded Swiss cheese, or cheddar, or jack--pepper jack is fun
6 slices bacon, cooked and crumbled
3/4 cup ham, minced
2 green onions, chopped
1/2 green or red pepper, diced
3 eggs
1 cup heavy cream or half and half
1/2 tsp. grated lemon peel
1/2 tsp. salt
1/4 tsp. dry mustard
Bake unpricked pie crust for 5 minutes at 425 degrees. Remove from oven and sprinkle ham, bacon, cheese, onion and pepper on crust. In a medium bowl, combine eggs, cream, lemon peel, salt, and dry mustard. Pour evenly over cheese mixture. Bake at 325 degrees for 45 minutes or until set. Remove from heat and let stand about 10 minutes before serving. Serve with salsa or diced tomato. Serves 6.
