MSCC Coconut Cupcakes

I really had high hopes for these sweet treats. I love coconut, I love cupcakes. I purchased coconut milk, shredded coconut and unsweetened coconut ribbons. I made batter as per recipe, I thought I was on track but this is what greeted me when I opened the oven. Failure.


I thought I could just pile on frosting and no one would know. I did. I have photos to prove it. But they just weren't great. They stuck to the pan, they stuck to the cupcake wrapper. They were coarse, heavy, dense and they just fell apart. And they didn't have a real coconut flavor. Is it my altitude, sometimes baking at over 4000 feet can cause trouble. Anyone baking at high altitude have success with these?



Check what other bakers did at MSCC.
Makes me wonder--do other bakers frost bad cupcakes just for a photo??
Will I make this again? No, not this recipe but I would love a yummy coconut cupcake recipe!
I'm excited to make granola with the coconut ribbons--they are tasty!

I had no problems with them rising and they tasted ok saying I don't like coconut. Yours still look great, know one would ever know they didn't rise. Good luck next time! ;)

Mine did not have a strong coconut flavor either. Mine looked ok, but I'm not a coconut fan, so I gave them away.

oh man, I saw these on another blog and was waiting for your rave reviews...the gal's blog that I looked at had nothing to say but wonderful things!

I would eat them anyway...the pictures look amazing!

I think we all definitely add frosting to make things look better! Your cupcakes look fantastic!

I too was disappointed with the lack of coconut flavor.

I thought they were ok but everyone else loved them. I didn't have problems with the recipe but would have preffered a stronger coconut flavor!

That's weird. Mine rose fine - perhaps it is due to the altitude. I enjoy living near sea level, makes baking a bit easier.

Mine didn't have a strong flavour either, but they were moist. I'd definitely ice a failure just for a photo. It would make me feel better.

sorry these didn't work out for you. We liked them. Have made them twice. Maybe because I increased the coconut flavor.

The photo makes them look really really yummy! Bummer you had problems. I sometimes don't mind a little pit in them because then I have more room for frosting! It usually happens when I undercook them, which I do more often these days...because I just hate dry cupcakes!!

Oh yes, frosting can cure all cupcake ailments! I had to bake my cupcakes an extra 6 minutes than the recommended time. When I took them out of oven, they looked a little "doughy," but they passed the toothpick test. Thanks for sharing your experience.

Oh, too bad on the lack of gratification with these. Mine worked out okay, more than okay actually, as we thought they were the best cupcakes EVER. So very good. I limited myself to one. OMW, they were good. High altitude baking must be very challenging. They look pretty, though, and your wrappers are so cute.

Sorry that these didn't rise for you! I also thought that they were lacking in coconut flavor.

I am from Utah and I occasionally have problems with my baking. I wish I could pinpoint it to the altitude but you never know, really. They did turn out pretty when all done. That is what frosting is for. :) Good job!

oops! i think i had a multi-tasking fail! i was reading several blogs and i think i put the comment meant for yours, on another blog from msc! ok serves me right for trying to make the best of time :S

Anyways, as i said on another blog (i cant even tell you whos blog it was!) i will frost an "ugly coconut cake" no matte what..and i'll always devour it. i cnat explain it, its just what the coconut does to me. tropics, suntan lotion (although i'm pale pale white), pineapples, sand beaches..you know, all that sort of stuff? anything coconutty taste like tropics. i lurve it. yours have still turned out cute and rustic. very very pretty!

aww! i'm sorry that yours didn't work out. i wish you'd give them a second chance.. they really are super fluffy and moist. if you're a fan of coconut, i'm sure you'd love them.

we all have bad days in the kitchen. =) i just had my own little kitchen disaster the other day, too. hehe. let's just say that there were giant flames.. hehe.

I'm sorry that your cupcakes didn't turn out....maybe it really was the altitude....?
