I love Pinterest, so many possibilities. I was excited to make a cinnamon muffin for my kids to eat as they left for home. The muffin I made had many positive reviews. It had a cinnamon filling, cinnamon chips and a strusel topping. It had to be delicious. But it wasn't wonderful, just ok. Not even blog worthy.
My son said, "Mom, why do you mess with perfection? Just make the Cinnamon Apple Muffins that we love."
So friends--here is the Harris Family's favorite muffin recipe. It is perfect!
APPLE CINNAMON BITES
1 ½ cup flour
1 ¾ teaspoon baking powder
½ teaspoon salt
½ teaspoon fresh ground nutmeg
½ cup sugar
Buzz together in Food Processor about 20 seconds.
Add 1/3 cup cold butter process a few seconds
Mix together:
1 egg
1/3 cup milk
½ cup grated apple
Add to food processor and just buzz a few seconds. Please don't over mix.
Lightly spray a 24 mini muffin pan—use small scoop of rounded batter in each cup. Bake 350 degrees for about 12-13 minutes. While warm dip muffin top in melted butter and then in cinnamon sugar mixture (1/3 cup sugar, 1 teaspoon cinnamon).

Haha, I know what you mean about having high expectations for recipes. Sometimes the simple recipes are the best. These sound delicious. Thanks for sharing!
Oh, my those look good!!!
Family traditions are usually there for a good reason: tried and tested many times and loved by all. I can see why your son recommended these. They look very yum!
Wow, wow, wow...I love the look/sound of these. If I made these I would need to confess gluttony for sure...I would not be able to stop at one or two. Better schedule them for when Matt and all his swim friends are home so I would only get ONE! Happy New Year to all of you.
Both Paul and I agree that you shouldn't mess with perfection. This recipe will always be Paul's favorite breakfast!
those look SO good!
Oh those sound great, I would be burning my mouth trying to eat them warm.
I've had these on my must-make list for some time now. They look scrumptious. You made it to the Top 5 for this one!
These look so good! Just what I need to eat now.
