Lemon Angle Pie for Pi Day

I don't make many pies--you have to have guests over to make a pie and we did, so I did! It was in celebration of Pi Day, I was going with a theme.
Angel Lemon Pie is heavenly--if we eat food in heaven it will be this light delicious desert. It has a meringue crust, which is the easiest crust ever made! The filling is a lemon curd made completely in the microwave. When cool it is lightened with whipped cream.
That's it. The only tricky part is it must be made the day before which is a great thing when entertaining. You must also let the crust and lemon curd cool before filling the crust. Just read the recipe through, a good thing to always do, before making a recipe.
Lemon Angel Pie
Ingredients
4 eggs at room temperature, separated
1 cup sugar
1/4 teaspoon cream of tarter
1/2 cup sugar
4 tablespoons lemon juice, (I used Meyer Lemons but any lemon would work)
1 tablespoon lemon zest
1/4 teaspoon salt
2 cups whipping cream

Meringue Crust
In a stand mixer fitted with the wire whip beat the egg whites until foamy. While mixer is runing gradually add 1 cup sugar and the cream of tarter. Beat until stiff but not dry. This happen in about 3 minutes. I think a high altitude with no humidity helps (this is one of the few desserts that works best high and dry!) If you cannot get your egg whites to go stiff enough no fear they will work. Butter a deep dish glass pie plate. Put meringue in pie plate, mine looked like a beautiful cloud!
Bake at 300 degrees for 45-50 minutes. Cool completely.

This is the meringue going into the oven. It is light and beautiful!

When the meringue came out of the oven it puffed over the pie shell--it was gorgeous! As it cooled it slowly sank down to create a perfect pie shell.

Filling
Put the 4 eggs in a microwave safe bowl, I used a quart Pyrex measuring cup. Beat slightly. Stir in 1/2 cup sugar, lemon juice, lemon rind and salt. Cook about 3 minutes stirring with a whisk every 30 seconds. Mixture will be very thick, lemony and sweet. That is just how it should be! Cool completely. I cooled this in the fridge.
In a clean mixer bowl fitted with a wire whisk pour the 2 cups whipping cream. Beat until stiff--don't over beat or you really will get butter. How do I know?? I make many mistakes--I share them with you so you don't need to make them. Do not add any sugar to this whipped cream. Put half of the whipped cream in the cooled lemon curd mixture. Stir gently. You want to combine the ingredients but not deflate the cream. When mixed pour into the meringue shell. Using a short off set spatula spread the lemon cream on the crust. Top with the rest of the whipped cream. I also used an offset spatula to spread the cream. Put the pie in the fridge. It needs to cool up to 18-24 hours.
Serve the chilled pie and enjoy rave reviews (I did)! Serves 8 adults.

I googled this recipe and found several that were similar. It is a very basic recipe and has been around for years. I liked the photos in Homebased Mom.  My Mother-In-Law was so excited to eat this--it was similar to a recipe her sister made many years ago. Aunt Melba has been gone for many years. She was a great cook, I know eating this dessert brought back many memories for my Mother-In-Law. Food will do that to you! It was a great dessert, I will make it again soon.

Spaghetti Pie

Spaghetti Pie exceeded all my expectations. It is the best parts of lasagna and spaghetti. We loved it, the family I shared it with loved it and so did my mom. That is a lot of love. It does have a few steps but came together quickly. Next time I make it I will make the meat sauce in the morning. Then cook the noodles and assemble the 'pie' in the evening. Doing a bit of dinner prep in the morning is so helpful.

Spaghetti Pie
12 ounces thin spaghetti or vermicelli
1 pound lean ground beef
1 small onion, diced
1 clove garlic, finely minced
1 tsp. salt
1/2 tsp. pepper
28 ounce can crushed tomatoes
16 ounce tomato sauce
1 tsp dried basil
1/2 tsp dried oregano
4 ounces light cream cheese, softened
1/2 cup lowfat cottage cheese
3/4 cup Parmesan cheese
3/4 cup mozzarella cheese

1. Lightly coat a deep 9 or 10 inch pie plate with cooking spray and set aside.  Preheat the oven to 400 degrees F.
2. Cook the noodles until al dente according to package.  While the noodles boil brown ground beef. Add the onion, garlic, salt and pepper. Cook until the meat is cooked through.  Add crushed tomatoes, tomato sauce, dried basil and oregano.  Simmer the sauce over medium-low head for 10 minutes.
3. When the noodles are done, drain and return to the pot.  Immediately stir in the softened cream cheese and toss the noodles by lightly lifting them up and over with tongs until the cream cheese is mostly incorporated. Stir in the cottage cheese, Parmesan cheese, and the mozzarella cheese.  Toss until the noodles are evenly coated.  Stir in 3 cups of the red sauce.  Keep the remainder of the sauce warm on the stove.
4. Scrape the noodles into the prepared pie plate and using a flat spatula press the noodles evenly into the dish so they are tightly pressed together and evenly flat across the top. Sprinkle an additional 1/4 cup of Parmesan and mozzarella cheese on top.
5. Bake the spaghetti pie for 20-22 minutes, until it is hot and bubbly and the cheese is golden on top.  Let the dish rest for 10 minutes.  Cut into slices and serve with remaining red sauce.
--This makes 6-8 generous servings. Which is way to much for 2! It does reheat well so leftovers are great. I made 2 smaller pies and have one in the freezer for another day.
--The meat sauce was excellent on its own. It is easy to make and would be yummy on spaghetti.

Plum Cake

This delicious dish could be called a cake, pie or cobbler. I'm sure this is a dessert my grandmother made, it is old fashioned goodness. It is simple, it is ordinary, it is perfect.
It comes from Dorie Greenspan's, Baking From My Home to Yours (my all time favorite cookbook).
Jess requests this for her birthday every year. It really needs to be enjoyed more than once a year!

Plum Cake
2 pounds ripe but firm plums, pitted
1 1/2 cups sugar
1 teaspoon cinnamon
1/4 teaspoon ginger
1/4 teaspoon ground coriander
1 cup flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup milk
1/2 teaspoon vanilla
1/2 teaspoon almond extract
1 stick butter cut in 4 pieces
Heat oven to 350.
Cut each plum into 6-8 pieces and toss into a bowl. Add 1/2 cup sugar, cinnamon, ginger and coriander. Stir to combine. Let sit while you prepare the batter. The plums will give up a bit of juice and form a syrup.
Put the remaining 1 cup sugar in a bowl. Add flour, baking powder and salt. Stir to combine. Add the milk and extracts and whisk till you have a smooth batter.
Put the butter in a 9x13 Pyrex or Stoneware baking dish. Put in oven and let  the butter melt--about 5 minutes. Remove hot pan from oven, whisk batter one more time and pour over melted butter. It will probably set around the edges. Scatter the plums evenly over the batter and drizzle any remaining syrup. Bake for 40-50 minutes or until the top is golden and a thin knife inserted into the center of the cake comes out clean. Cool for at least 20 minutes, or let cool to room temperature. Serve with vanilla ice cream. This dessert is best if eaten the day it is prepared--but I must say that a leftover piece tasted very good for breakfast. I just look at it as fruit and milk. Perfect way to start a day!

Berry Sour Cream Pie

It was my sweet Mother-in-Laws Birthday. I do think birthdays demand a special dessert. I reviewed my Pinterest boards, favorite treats and finally came up with what turned out to be a winner. I knew Geneel liked cheesecake, she also likes pie and fruit. I found a recipe on Jamie Cooks it Up that fit my criteria, I changed it to suit my needs. Mostly because I did not wast to go to the store so I made it with what I had in the freezer/pantry.

Berry Sour Cream Pie
Crust
I started out with a homemade graham cracker crust
1 sleeve of graham crackers, crushed
1/4 cup granulated sugar,
5 tablespoons of melted butter.
A pinch of salt
Add graham crackers to a food processor--process till smooth, finely ground.
Add sugar and pulse until combined.
Add butter and salt and pulse again to combined
Put damp crumbs in a deep dish pie plate--I used a stoneware pie plate. Evenly press crumbs on the bottom of the pan as well as up the sides. I use a small measuring cup and press the crumbs firmly in the corner and then up the side. Be patient--this might take a minute. Get the crust as even as possible. Put the crust in the freezer to chill.
You could also use a store bought graham cracker crust. A homemade or purchased regular pie crust.

Topping
3/4 cup sugar
1/4 cup cornstarch
10 tablespoons water
2 tablespoons lemon juice (fresh squeezed)
3 cups fruit--if frozen defrost it in the microwave for a minute of so. You want the fruit room temperature when you add it to the sauce.
dash salt
1/2 teaspoon vanilla
1 tablespoon butter
Mix cornstarch and sugar in a medium sauce pan stir well, add water and lemon juice. Heat on medium heat until mixture has thickened and is very hot. Stir rapidly so it doesn't lump. Add fruits and gently stir until mixture is thick, bubbling and shiny. Stir in salt, vanilla and butter. Pour sauce in a bowl, put in the refrigerator and cool to at least room temperature. I used one cup of blue berries and 2 cups of raspberries--it is what I had in the freezer.

Filling
1 8 ounce package of cream cheese--softened
1 cup powdered sugar
1 cup heavy cream (whipped)---you can use an 8 ounce container of Cool Whip in place of the cream, if you do, use all of the powdered sugar and vanilla in the cream cheese mixture.
3/4 cup sour cream
1 teaspoon vanilla
dash salt
In you stand mixer with a whip attachment whip the cream till soft peaks  appear. Add 1/4 cup of the sugar and 1/2 teaspoon of the vanilla. Don't bother to clean your whip. Using a rubber scrapper scrape the cream into a small bowl. Using the slightly dirty bowl and whip (it is ok today) add your softened cream cheese. Now cooks when I say 'softened' cream cheese I mean almost warm--very soft. Put it in the not so clean bowl, add the not so clean whip and whip the living daylights out of the cream cheese. Lumpy cream cheese is not fun in any dessert. Now is your moment to get the lumps out. Add the 3/4 cup sugar and beat again until very smooth and creamy. This is how your dessert will look. Add the sour cream, half teaspoon of vanilla and dash of salt. Beat gently again. You should have a smooth, dreamy, light almost white filling. Now with a rubber spatula fold in the whipped cream. Do not over mix once the whipped cream has been added as the cream will slightly deflate. No one likes deflated cream! Now you have one delicious filling!
Take the pie shell out of the freezer, add the creamy mixture to the pie and smooth.
Cover the white filling with the now cooled fruit filling. Don't try and overfill--it will make a mess. Scrape the leftovers into a small container and top you waffles, pancakes or french toast with it.
I realize that this pie looks like too much work but take it a step at a time and it will come right together. This recipe makes one deep dish pie or 12 individual tart servings. Purchase the cute little graham cracker shells, who doesn't like their very own dessert!

Great American Brownie Pie

Brownies are one of my favorite food groups. I like cakey, chewy, with nuts, without nuts, frosted and unfrosted. So what makes this brownie recipe stand out? It has to be the addition of almond extract, almonds, maraschino cherries and white chocolate chips. Its fun pie shape was unusual and made a fun presentation. This made a delicious Sunday Dessert--everyone loved it. I'm happy to add it to my list of yummy brownie recipes!

Great American Brownie Pie
1/2 cup butter softened
3/4 cup sugar
2 eggs
2 tablespoons corn syrup
1 1/2 teaspoon almond extract
2/3 cup flour
1/3 cup cocoa
1/4 teaspoon baking powder
1/3 cup chopped maraschino cherries
1/3 cup sliced almonds
1 cup white chocolate chips (I used mini white chips)

Cream butter and sugar, add eggs, corn syrup and almond extract. Mix well. Combine flour, cocoa and baking powder, whisk to combine. Add to creamed mixture and stir gently. Drain chopped cherries on paper towels. Fold the cherries, almonds and chips into batter.
Spread mixture in a deep dish 9 inch pie plate that has been sprayed with Pam for Baking. Bake at 325 until a toothpick comes out clean--about 35-40 minutes. Cool. Serve with whipped cream or vanilla ice cream, garnish with cherries and almond slices.

Coconut Lime Dessert

You know I love a good chocolate dessert but lately I have been craving citrus! It started with Lemon Pie Bars and now I have a wonderful lime/coconut dessert. This dessert is made in the food processor, it comes together in a moment but the waiting time is difficult. This no bake dessert needs to chill for several hours. The good thing is that you can make it a day or two ahead. Keep it in the freezer, remove 10 minutes before serving and it is just delicious.
This recipe came from Jill's high school friend Sarah. She blogs at Red Head Recipes. Thanks Sarah for one great recipe.

Coconut Lime Dessert
Crust
1 sleeve graham crackers
1/2 cup coconut
2 tablespoons brown sugar
6 tablespoons melted butter
Put graham crackers, coconut and brown sugar in food processor till crumbly. Add melted butter, pulse. Press crumbs in a 10 inch tart pan that has been sprayed with Pam. I used 3,  6 inch pie pans--perfect for sharing. Bake for 10 minutes at 350 for a crisper crust or put in the freezer for 15 minutes.
Filling
2 8 ounce packages cream cheese
1 can cream of coconut,15 ounces--found on the drink aisle
1/2 cup fresh lime juice, 3 or 4 large limes
grated zest from 1 large lime
1/4 cup sugar
1/2 cup heavy whipping cream
Wipe crumbs from food processor, put in cream cheese--it can be cold, coconut cream, lime juice, zest and sugar. Process until very smooth and creamy. Scrape mixture in a large bowl. Add cream to the bowl of the food processor (no need to wash--isn't this easy) watching closely turn food processor on for a few seconds--it will whip the cream. If you overdo it you will get butter--which isn't a bad thing but for this recipe we want whipped cream. Fold cream into cream cheese/lime mixture pour into pan(s). Freeze for 4 hours. Remove from freezer 10 minutes before serving. Enjoy one delicious dessert!
To make this gluten free--just pour mixture into ramekins or individual small bowls. It is delicious without the crust.

Chicken Pot Pie for PI Day

Pi Day Pie Party

I hate to admit it but I am not a pie maker. I like cookies and brownies. Years ago hubby asked me when I was going to be old enough to make pies. My response was always, 'In ten years'. When you say that in your mid 20's you think you will have plenty of time to learn to make pies. I have given him the answer over and over.
Well the time has come, I think I am finally old enough to make pies! I remember all the fun pies that were posted last year on PI Day. This year I would have a pie for PI Day. Thanks to Barbara Bakes and Dorie I finally felt that I could tackle a pie. I started out easy with a Chicken Pot Pie. I opted for just a top crust--baby steps. I made a quick crust in my food processor--nothing difficult about that. The filling was a delicious sauce full of veggies and meat. I used 6 inch pie pans (they are just so cute) because there are just two of us. One pie was plenty for dinner and enough for a hubby's lunch tomorrow. I also have enough filling for a mini pie to take to Mom tomorrow. Life is good now that I am a Pie Maker!

Chicken Pot Pies
 Pastry
2 1/2 cups flour
1 teaspoon salt
4 tablespoons butter, chilled
2/3 cup shortening, chilled
Ice water--about 5 tablespoons
Pulse flour and salt in food processor. Drop in diced cold butter and cold shortening and pulse just till they are cut in. Dorie says you should have pieces the size of fat green peas and others the size of barley. Add the ice water and pulse off and on until you have a mixture that sticks together when pinched. Dump the mixture on a Roll'pat and gather together and form into 4 discs. Wrap in plastic wrap and refrigerate at least an hour.
This whole process really only takes a few minutes.

Filling
1/3 cup butter
1/3 cup diced onion
1/3 cup diced celery
1/3 cup flour
1/3 cup milk
1 3/4 cup chicken broth
1/4 teaspoon salt
1/4 teaspoon pepper
1 1/2 cups diced cooked chicken (Rotisserie works great)
1 1/4 cups diced cooked potato
1/2 cup diced cooked carrots (you could use frozen)
1/2 cup frozen peas
Melt butter in pan, saute celery and onions about 5 minutes or until tender, add flour and seasonings. Whisk and bring to a bubble, cook for a minute. Add milk and chicken broth, heat and stir until mixture becomes quite thick, cook for a minute. Remove from heat and add chicken and veggies. Put in individual ovenproof dishes. Don't overfill. Roll out pastry on a lightly floured Roll'Pat, make sure you roll it out an inch bigger than your dish. Put pastry on top of pie, crimp if using a pie plate. Cut a slit in the top to let steam escape. If using a dish with straight sides just let pastry hang down and lightly press to sides of dish (check out Barbara's post to see this method). Bake at 425 for 30-35 minutes till light brown.

Will I make this again??? YES! It is comfort food at it's finest. It's not a 30 minute meal but with some planning it can be a weeknight meal. Dorie says that well wrapped the pastry can be kept in the fridge for 5 days or the freezer for 2 months. How nice would it be to always have some pastry in your freezer. The filling came together quickly. I diced my potato and cooked it in salted water for about 8 minutes, I took the potato out and then added the diced carrots to the boiling water for a few minutes till they were crisp tender. The chicken was left over from a roasted chicken earlier in the week. You could make the filling earlier in the day but I would heat it up before it goes in the tin.
I used the leftover filling and filled a small dish, I love the rustic look and how the pastry is draped over the dish. More crust per bite--that's a good thing!
