Gingerbread Baby Cakes TWD/BWJ


First of all please know that I do love ginger--in any form. I just made Dories Ginger Cookies for a Christmas party and they were delicious. I was excited to make Gingerbread Baby Cakes. I don't own baby pans so I made half a recipe and put it in a 'baby bunt' pan. It was beautiful as you can see. It smelled wonderful. But then I tasted it. I cut myself a small slice and put a big dollop of whipped cream on it. The cream helped for sure--but not enough. It wasn't that the ginger was too strong because all I could tasted was molasses.
I had my husband taste it, his comment was, 'that's really a waste of whipped cream'. You will have to check out other TWD bloggers and see how they felt, we gave it at least 2 thumbs down.
I'll stick to Dories All In One Holiday Cake.

But I do have a darling granddaughter, you can enjoy her!

Well your cake looks wonderful. I didn't enjoy the taste of the cake either. But might try again with less ginger and molasses.

I'm with you. We had the exact same reaction. I love strong gingerbread, but there was no balance here between the molasses and the other flavors. My husband actually spit his out. I made Dorie's holiday cake earlier this month and THAT is deeeelicious. I'll have to try her ginger cookies that you mentioned.

I too did not like the taste of molasses. I now need to find a better gingercake recipe. :)

Oh no! That's terrible. At least you weren't alone in your misery of this molasses cake. And yes, Eliza Jane IS cute.

Well, your cake is beautiful...so sorry it was not as tasty as it looks. We love this cake...no strong molasses flavor. We did use lemon sauce with our cake...maybe that created some balance? Anyway, hope you enjoy baking some other holiday treats that are more to your liking.

Cindy, but your Gingerbread Cake looks so perfectly lovely and has such a wonderful warm color, kind of hard to imagine that you did not quite enjoy it that much - your grand-daughter looks absolutely adorable!

I'm agree the taste is very strong, too much spices in my mouth!!!!I was very interested by the recipe, I loved spices and gingerbread cakes normaly, but this time it was very aggressive for me!!!!maybe syrup or honey instead molasses, less ginger and no pepper.

Beautiful! I'm with you though - way too much molasses. Overpowered the other flavors which was a shame.

fortunately I didn't have any molasses so I used cane syrup. I think it made a big difference. Lovely little cake.

Your cake looks just about perfect. Perhaps reducing the amount of molasses would help balance out the flavors. We had run out of molasses and could only add 1-1/2 cups and also used coconut sugar. Perhaps the slight omission and substitution helped with the flavor. We loved this cake overall.

I'm sorry you didn't like the recipe. It sounded promising, as I love ginger. But it did sound like a lot of molasses.

Oh, I wish we could have regular flour at my house. I love, love, love gingerbread. I'll have to see if this works with gluten free flour. Thanks for the great recipe!
