Filling:
1 cup sharp cheddar, shredded
1/2 cup pepper jack cheese, shredded
2 green onions, sliced
1 cup sliced olives
1/2 cup chopped cilantro
Pour 1/2 cup enchilada sauce in the bottom of 9x13 pan. Wrap 10 corn tortillas in a wet paper towel and microwave 60-90 seconds. Spoon a small amount of filling into the middle of a tortilla, roll, and place in pan. Top with more Enchilada Sauce and shredded cheese, I like a mixture of extra sharp and pepper jack. Baked covered with foil about 30 minutes, remove foil and continue to cook another 5-10 minutes. Serve with sliced olives, green onion, cilantro and sour cream.

I've never made enchiladas myself..I've only ever used a shopbought kit. Thanks for the recipe! Looks colourful!

Anyway, thanks for your comments on salads! I never thought about hy chopped salads are better, but I think the uniform size does help! And I agree, they can be a lot of work so they're not as fun to eat once you're tired from making them!
