Extra Tasty Enchiladas


Filling: 
2 cups shredded pork
1 cup sharp cheddar, shredded
1/2 cup pepper jack cheese, shredded
2 green onions, sliced
1 cup sliced olives
1/2 cup chopped cilantro


Pour 1/2 cup enchilada sauce in the bottom of 9x13 pan.  Wrap 10 corn tortillas in a wet paper towel and microwave 60-90 seconds.  Spoon a small amount of filling into the middle of a tortilla, roll, and place in pan. Top with more Enchilada Sauce and shredded cheese, I like a mixture of extra sharp and pepper jack. Baked covered with foil about 30 minutes, remove foil and continue to cook another 5-10 minutes. Serve with sliced olives, green onion, cilantro and sour cream.

I've never made enchiladas myself..I've only ever used a shopbought kit. Thanks for the recipe! Looks colourful!

I'm not big on Mexican, but your photos and this recipe look SO good that I might have to try it! Olives...mmm!

Anyway, thanks for your comments on salads! I never thought about hy chopped salads are better, but I think the uniform size does help! And I agree, they can be a lot of work so they're not as fun to eat once you're tired from making them!

What great photos of this...guys would love this one as well...I used to make something like this and sort of forgot about it...time to add it in soon...let's see tomorrow is your pasta dish with gorgonzola so I guess this will be Monday!
