TWD/BWJ Lemon Loaf Cake

So...Lemon Loaf Cakes, I made this treat today. The beauty of making something at the last minute is that you can use the advice of many bakers who are not procrastinators.

This cake comes together in five minutes says the instructions. I guess this baker didn't have 4 small children under 5 in their kitchen. But it did come together quickly and in one bowl. I rubbed my lemon zest into my sugar--a trick I learned from Dorie. It smells heavenly and makes me happy. I also added the juice of a lemon to up the lemon flavor. I baked 3 small loaves in my Pampered Chef Mini Loaf Pan. I also made a frosting with a little butter, powdered sugar and lemon juice.
The verdict...delicious! The cake had a tight crumb and was very tender. I think a bit more salt would help and maybe some lemon oil to up the lemon flavor.  Next time I make this I will serve it with a fresh blueberry sauce and whipped cream.

lemon is one of my favorite flavors. Anything citrus-y is a big plus in our house. (almost ranks as high as chocolate)

Oh my. The thought of blueberry sauce makes me want to bake this again as soon as the blueberries come in!

Mine didn't come together in 5 minutes, because you have to make sure all the ingredients are at room temperature. I still liked it! It looks great with the glaze.

I ALMOST rubbed the zest into the sugar, just for that smell. Love doing that. But decided just to do exactly what the recipe said (even though I knew that wouldn't change things).
I don't think any baking/making only takes 5 minutes at my house!

More lemon and a glaze...yes yes!! That looks lovely...I loved this recipe, and the guys did as well as it went a long way, one small slice was satisfying and I didn't even glaze mine...but I will next time! I think I am caught up finally with your blog...didn't comment on all the posts, but read them all! Loved all those gifting ideas...you are so thoughtful!
