Tuna Rice Comfort Casserole


Why make Tuna Rice Comfort Casserole?
  • inexpensive
  • quick
  • ingredients are always in the storage room
  • the kids liked
  • uses leftovers ex. rice, cheese, olives, onion, rice krispies, almonds
  • it says comfort   


Tuna Rice Comfort Casserole

½ cup chopped onion
2 Tablespoon butter
1½ cups cooked rice
1 can Cream of Mushroom Soup
1 can tuna, drained or cooked/canned chicken
1 cup shredded cheese
¼ cup sliced olives
1 ½ cup rice krispies
¼ cup sliced almonds
Sauté onion in 1 tablespoon butter, combine with soup, rice, tuna, cheese and olives. Pour in greased baker. Melt 1 tablespoon butter, mix with cereal and almonds. Sprinkle on top of casserole.
Bake uncovered at 325 degrees for 25 minutes.

mmmm, I forgot how much I love that casserole...definately takes me back to my "younger" days. I think I will make this next week when things cool down a bit!

I don't like to admit this, but I've never had tuna casserole. After seeing your gorgeous rendition, I may have to change that very soon! It looks delicious. :D

NO! (LOL, bet you have never gotten that comment before but I could not resist as I cannot stand tuna.) However, I am sure tuna lovers will say YES! (I hope you are laughing at my silliness and not mad at me for a negative comment.)

Thanks for reminding me of this!! We just got home from soccer practice and I had no plan for dinner, well, 15 minutes later and it's in the oven, I had all the ingredients in the pantry!! Thanks mom.. Miss you!
